In a recent interview with Ravi from Talkerstein Consulting, Emmanuel opened up about the gritty reality of the restaurant industry, the power of faith, and the bold risk that defined his success.

"It's like coming to Israel when you come here," Emmanuel explains. He describes Kapara as an explanation of his childhood—a place defined by good food and a welcoming "home vibe". It’s not simply a business; it’s an environment and a culture intended to make guests feel like family (Mishpacha).

The Reality of the Grind

The restaurant industry is notorious for being difficult, and Emmanuel admits he went in blind. "I didn't know how to use deep fryers, how to maintain them... permits and doing this and doing that," he recalls.

Beyond being an owner, he had to become a plumber, a renovation expert, and an appliance repairman just to keep things running. But rather than being discouraged, he leaned into the difficulty. "I love hard," he says, noting that the industry is perfect for anyone who hates being bored and likes a challenge.

The "Double or Nothing" Moment

There was a critical moment where the business faced a crossroads. Despite the money coming in, there was no profit staying in the business because he didn't yet have the right systems or people in place.

Most people might cut their losses, but Emmanuel saw how much the community loved the food. His reaction? "I gotta go double or nothing".

He decided to take a massive risk: he expanded to a larger space to increase production capacity and hired the right people to make the vision work. "There's no way that I'm going down like this," he told himself. That decision to double down during a time of doubt is exactly what allowed Kapara to expand to where it is today.
